When I was little Sunday morning always meant pancakes. There is nothing like having a great breakfast and relaxing in the morning. These are my favorite pancakes. My husband and son love them too.
I like to cook them on the skillet with coconut oil and add sugar free syrup. I have even had these for lunch. No one in the family will know they are clean. Enjoy!
Blueberry Banana Protein Pancakes
1 cup oat flour
1 cup coconut milk or Almond milk
1 egg white
1 tsp baking soda
1/2 tsp cinnamon
1 scoop protein powder ( I used vanilla)
1/4 tsp salt
1 banana mashed
1/2 cup blueberries
Mash banana separate and add to wet ingredients.Mix the wet ingredients and dry ingredient separate then mix together. Add blueberry to mix.Serves 9
