When you don’t have many groceries in your house and don’t want to go out, you have to get creative. Sometimes some of the best recipes come from finding what you do have in your refrigerator and being inspired. If you like Chinese Fried Rice without the added sodium and calories you will love this meal.
Clean Chicken Fried Rice
Ingredients 2C cooked Brown Rice 1 carrot stalk 1 celery stalk 1/2 onion 1 green onion 1/2C frozen corn 2 cooked grilled chicken breast 2 whole eggs 1Tbsp coconut oil 1/2tsp currie powder 1tsp low sodium soy sauce 1. Cook rice as directed and set aside. 2. Chop onion, celery,carrot, green onion and chicken. Add to skillet with coconut oil and sautee for 2-3. 3. Add egg to one side of the skillet and scramble. 4. Add cooked rice, soy sauce and currie to skillet. Mix well for 2-3 minutes
Sounds delish! I add edamame and sirachi sauce to mine for a little kick.

I got mine at Publix. I am sure you it can be found at any local grocery store.
