I love Sunday mornings. Growing up Sunday was always a big breakfast day in our house. I want to continue that tradition with my family and almost always make pancakes. Our favorite pancakes our my Banana Blueberry that I recently posted, but today I decided to change it up. Here are my Almond Banana Protein Pancakes.

  • 1 cup oat flour
  • 1 cup coconut milk unsweetened
  • 2 Tbsp Almond Flour
  • 1 whole egg
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 scoop protein powder ( I used vanilla)
  • 1/4 tsp salt
  • 1 banana mashed

Mash banana separate and add to wet ingredients.Mix the wet ingredients and dry ingredient separate then mix together. Serve 13 small pancakes

Cooking them on a skillet with coconut oil adds a lot of flavor! Makes you not even miss butter.

Luckily my son slept in until 10am today so this was more like brunch for us. Now we are off to enjoy our Sunday at a local festival. Have a Great Sunday!
